It depends on your goals.
If you want to lose or maintain your weight, calories is ALL you should care about. The less calories, the better, so long as you don't go below 1200/day (any less, and your body goes into starvation mode).
If you are concerned about your overall health, you might want to keep your intake of saturated fat low. Diets with a lot of saturated fat put you at a higher risk of heart disease. The FDA recommends you shoot for saturated fat being about 7% of your overall calories.
As for me, I'm not sure life is worth living without cheese, so all that science isn't going to put me off eating it. :)

Both and all.
This is going to give you the nutition density of your food (or lack thereof). Just be careful not to micromange too far. Use this as an exercise, write down everything you eat for one week and gather the following information:
-- Total calories per day
-- Timing of calories per day
-- Grams of protein per day
-- Timing of grams of protein per day
-- Grams of carbs per day
-- Timing of grams of carbs per day
-- Types of carbs (simple, natural, complex)
-- Grams of fat per day
-- Timing of grams of fat per day
-- Types of fats (trans, saturated, and unsaturated)
I would only do this once, after this you should have a good idea of the nutritional density as well as the nutritional value for your meal planning. Once you get an idea of the foods that are good to eat, use them to your advantage. You will need to give yourself a cheat meal at least once per week to take care of cravings - this is true with any diet.
Good luck!!
