“you are what you eat” by Dr. gilliam mckeith.. is very good. It has mostly vegan recipes, because she is against meat and dairy (except wild salmon and free range poultry..) and the book explains how food affects you organs and general health. There are lots of ideas for veg. broths and beans and different teas that benefit your health. It gives you guidnce on what foods benefit different organs in the body and sets out symptoms you might have and what foods you can eat to help against this. I am a veg, looking to make my diet more consistent and healthy, I borrowed this book from a friend but I am going to buy my own copy asap.
Low cal? I have no interest in low cal, but the book you want is The American Vegetarian Cookbook from the Fit For Life Kitchen.
The nutritional facts for foods are in the back of the book.
The Millennium Cookbook has the nutritional analysis of each recipe included as does the Now and Zen Cookbook. Both are Vegan.
Vegetarian Times magazine is a great place to start as the recipes taste great and are easy to make.
